Recently, a friend gave me a Groupon for a small box of fresh fruit and vegetables from a local farm. I was really excited because I am looking into getting a CSA Share this summer and wanted to check it out — how much do you get, is it a nice selection of fruits and vegetables, etc. I ordered my box and I was impressed about how much was actually in the small box: collard greens, a bag of carrots, 6 potatoes, 4 apples, 4 oranges, 6 pears, 5 bananas, 3 bunches of garlic, a head of lettuce.
Everything looked delicious. My only problem was the collard greens. I’ve never even eaten collard green much less cooked them. I was at a loss. So I started looking a recipes online. I found one at www.wholefoodsmarket.com but I tweaked it a bit by adding red peppers, pine nuts, fresh diced tomatoes and shrimp.
1 bunch collard greens
2 carrots, shredded (these were also from my box and they were delicious)
1 red bell pepper, finely chopped
1/2 red onion, finely chopped
1/4 teaspoon sea salt
1/2 teaspoon ground black pepper
3 cloves of garlic, chopped
1/4 cup pine nuts
feta cheese, crumbled
1 cup of quinoa
1 tbsp. olive oil
1 tomato, diced
medium shrimp (I did enough so there was 6 shrimp per person)
In large skillet, heat olive oil. Put carrots, red peppers, onions, garlic, salt and pepper and cook until softened. Add 1 cup of quinoa to skillet and stir. After a minute, quinoa should be toasted enough to add the 2 cups of water. Bring to a boil. Reduce heat to a simmer and cover for 5 minutes. Add collard greens to pan, cover and continue cooking for 10 minutes.
In a small pan, toast the pine nuts. No additional oil is needed. Keep an eye on this so they don’t burn.
In another skillet, add 1 tbsp of olive oil. Add shrimp. Season with salt and pepper. Cook until done.
Add the shrimp and feta to collard greens and quinoa. Once plated, add fresh tomatoes and pine nuts as a garnish.
As I said earlier, I’ve never had collard greens before. I’d have to say that they were quite tasty and the dish was delicious. My husband liked it as well. Although he said that is could have used a bit more garlic.
