I don’t know about you, but I absolutely love when the heirloom tomatoes start to show up at the Farmer’s Markets. There are a seemingly endless number of varietals of heirloom tomatoes from which to choose, including Black Krim, Hungarian Heart, Black Prince, Pink Brandywine, and Green Zebra just to name a few.
They are so colorful and I think the flavor is sweeter. Just look at those tomatoes! Don’t they look delicious?!
And they pair beautifully with egg salad and avocado.
Egg Salad Stuffed Avocado with Heirloom Tomatoes drizzled with White Truffle Oil
Cut avocados in half and remove pit. Put 1/4 cup of egg salad on avocado. Top with diced heirloom tomatoes. Salt and pepper to taste. Drizzle with White Truffle Oil.
