I know I’ve said this before, but I love oatmeal! I like it plain with fresh or dried fruit or baked. We’re going to the Farmer’s Market and then doing some more errands so today I’m powering it up a bit by adding chopped almonds, almond butter and sliced bananas. The balance of carbohydrates, fat and protein will keep your appetite satisfied well into the afternoon.
1 cup gluten free rolled oats
2 cups water
Pinch of salt
1-2 tablespoons almond butter
6-12 raw almonds, chopped
1 tablespoon flax seeds
1 banana, sliced
1/3 cup hemp milk (or your favorite nut milk)
Combine oats, water, and salt in a pot and bring to a boil. Reduce to a simmer for 10 minutes. Let it sit for a minute or so.
Spoon 1/2 to 1 cup cook oats into bowl (depending on how hungry you are). Sprinkle cinnamon over oats. Add flax and stir. Add sliced banana, chopped almonds and almond butter and stir.
I don’t usually put milk on my oatmeal. I used to love maple brown sugar, butter and milk on my oatmeal when I was younger but these days I prefer it dry….but today I put some Hemp milk on and it was yummy.
Yield: 2-4 Servings
