My normal breakfast during the week is either oatmeal with fresh (or dried) fruits and nuts or some form of eggs. On Sundays, we splurge and have pancakes.
I am on a breakfast roll these days! I’ve been really excited about switching things up. This morning I had a banana split … and no, it didn’t include ice cream. Sorry to disappoint! This version had been ”healthified”!
I used Greek yogurt for the “ice cream” for that protein punch! I’ve topped the “split” with fresh berries and gluten free granola. Feel free to make this your own by switching up the ingredients and/or adding toppings to your liking (ideas below).
Don’t think this dish has to be reserved for breakfast, it makes a healthy snack as well!
1 medium banana
1-6 oz cup of Greek Yogurt (I used Trader Joe’s 0% Honey flavored)
1/2 cup blueberries
3 medium strawberries, sliced
1 tablespoon gluten free granola (I used Udi’s)
Take a banana and cut lengthwise and place in the bottom of your dish. Put yogurt on top of bananas. Top with blueberries and sliced strawberries. Sprinkle with granola and enjoy!
banana – 100 calories,
6 oz Trader Joe’s Honey flavored Greek Yogurt – 120 calories
1/2 blueberries – 40 calories
3 medium strawberries – about 15 calories
GF granola – 30 calories
for a grand total of approximately 300 calories. Not bad!
use cottage cheese instead of Greek yogurt
add chocolate hazelnut spread, nut or seed butter or fruit preserves
sprinkle with cinnamon, raisins, nuts, other fresh fruit, goji berries etc!
