Spinach and Kale Vega Ice Cream…do I have your attention now? My husband and I went to Costco today and there was someone there demonstrating the Vita-Mix. Since I have one I stopped by to see what recipes they were trying out. I got there just in time for him to make a Spinach Ice Cream. I have adapted his recipe slightly to combine kale and to make it vegan.
Spinach and Kale Ice Cream
1 cup kale leaves (de-veined, washed, and patted dry)
1 cup baby spinach
1 ripe banana
3 pitted medjool dates
1 tbsp or so unsweetened plain almond milk (optional, use only to help get the blender going and adjust amount accordingly)
1/2 tsp vanilla extract
2 cups of ice
Place all ingredients in the Vita-Mix, lemon peel/seeds and all. Start with Variable 1 and move up to Variable 10 quickly. Use tamper to mush things into blade. Switch to High Setting for 30-60 seconds. You should hear motor sound change and 4 peaks appear. Serve immediately or put in freezer container.
