Lamb is often associated with springtime, particularly with the traditional of eating lamb for Easter. But we love lamb so we think it is perfect to serve to dinner guests, for special occasions such as Valentine’s Day, Mother’s Day, Christmas or even a weeknight meal.

Herbed Lamb Chops
Yields 6 (with 2 chops per person)
12 lamb chops, about 3/4-inch thick
1/4 cup extra-virgin olive oil
2-3 large garlic cloves, crushed
1/2 teaspoons dried oregano
1/2 teaspoon thyme
1/2 teaspoons onion powder
1 teaspoon dried parsley flakes
1/2 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoons salt
1/2 teaspoon black pepper
Places chops in large ziplock bag. Add spices and olive oil. Make sure lamb chops are well coated with oil/spice mixture.
Let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
Heat a grill pan (or grill) over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.
