Thanksgiving is just around the corner and I thought I would take this opportunity to post this easy side dish.
If you are going to be having a lot of heavy dishes this Thanksgiving, these spicy carrots really need to make an appearance as well. Carrots are very nutritious, providing over 15 essential vitamins and minerals that are important for good health.
Spicy Apple Cider Carrots
Yields 8 servings
2 pounds carrots, peeled and cut on the bias
1/4 cup apple cider
1/4 cup orange juice
zest of 1/2 orange
1/4 cup organic brown sugar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon chili powder
2 tablespoons grass fed butter
Salt and freshly ground black pepper
2 tablespoons freshly chopped parsley leaves, for garnish
Bring a large pot of water to a boil over medium heat. Add the carrots to steamer basket. Cook for about 5 minutes until softened. Drain in a colander and set aside.
In a medium-size pot combine remaining ingredients, except the parsley. Bring to a simmer over low heat. Add the drained carrots and toss to combine. Simmer on low heat for 5 minutes to incorporate flavors. Transfer to a serving bowl, garnish with parsley and serve.
