Turkey Quinoa Tacos
Yields: 8 Tacos
1/2 lb. ground turkey
1/2 cup cooked quinoa
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne
1 15 oz. can black beans (I used Trader Joe’s Spicy Cuban Beans)
1 cup organic fresh or frozen corn
Grass fed or goat’s milk cheddar cheese
Salt and pepper, to taste
2 Tablespoons salsa + more for garnish
Avocado for topping (optional)
Heat a large skillet over medium heat. Once hot, add ground turkey and cook about 10 minutes, or until done. Add cumin, chili powers, cayenne and salt and pepper. Strain turkey.
If you don’t already have cooked quinoa ready, while turkey is cooking, bring a large pot of water and 1 cup quinoa to a boil, then reduce to a simmer. Cook quinoa 10-12 minutes, or until fluffy and all water absorbs. Remove from heat. In this recipe I only used 1/2 cup (so you can save the other 1/2 cup for another dish.)
Add turkey and quinoa back to frying pan. Add in beans and corn and warm through. Add 2 Tablespoons of salsa and mix well.
Warm corn tortillas on stove top, or microwave for 10-12 seconds.
To prepare tacos: Layer shredded cheese on bottom of taco shell, then top with turkey quinoa mixture.
Then top with salsa and avocado. Repeat steps for all tacos. Serve hot.
