My husband loves tomatoes (well, I do too, especially heirloom tomatoes) and I love peaches which means we buy a lot of them at the local Farmer’s Markets each weekend. So I thought I would make a Peach and Tomato Salad with my booty from the Farmer’s Market this past weekend.
Peach and Tomato Salad
Yields 4 Servings
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 large peaches
1 large red tomato
1 large yellow tomato
1 cucumber, peeled and seeded and cut into 1/4-inch pieces
1/4 red onion, thinly sliced
Whisk together olive oil, vinegar, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a small bowl; set vinaigrette aside.
Halve and pit peaches. Cut halves into quarters. Remove core from stem end of large tomatoes; slice into 1/2-inch rounds.
Combine peaches, tomatoes, onions and cucumber in a serving bowl. Sprinkle with remaining 1/4 teaspoon salt and pepper. Pour vinaigrette over salad.
