It’s nearing the end of peach season (so sad)…but I did pick up a few at the Farmer’s Market this morning. They were still a bit hard so I decided to use one and saute it with carrots for dinner. It turned out delish…I wish I would have taken a photo for you.
Sauteed Carrot, Peach and Fennel
Yields: 2 servings
4 carrots, sliced
1 peach, thinly sliced
1 tablespoon coconut oil
1 teaspoon fennel
1 teaspoon cinnamon
salt and pepper, to takes
Add oil to pan with carrots, fennel, salt and pepper. Saute for a few minutes.
When carrots start to soften add peach slices and cinnamon. Saute until tender and serve.
