Green Chile Corn Muffins with Ham
Yields: 12 muffins
1 1/3 cups guten free all-purpose flour
2/3 cup corn flour
3/4 cup ham, chopped
1/2 cup grated cheddar cheese (or Parmesan cheese)
2 large organic free-range eggs, slightly beaten
1 cup heavy whipping cream (or half & half)
1 (4-ounce) can chopped green chiles
3 Tablespoons honey
4 tablespoons unsalted butter, melted
1 tablespoon olive oil
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1/2 teaspoon red pepper flakes
Preheat oven to 425°F.
In large bowl, combine flour blend, corn flour, baking soda, baking powder, and spices.
In medium bowl, whisk eggs, heavy whipping cream, and honey together.
Add wet ingredients to dry – stir until just combined. Stir in melted butter. Add cheese, chiles and ham. Gently stir to combine.
Spoon batter into greased or paper lined muffin pan cups. Bake for 18 to 22 minutes or until golden brown. Cool 5 minutes; remove from pans.
