This gluten free bread crumbs recipe is very easy to make, and saves money to boot.

Bread crumbs are one of those indispensable ingredients. They give gratins and casseroles their attractive topping. They also give meatballs and meatloaf their consistent texture. They also help keep crab cakes and salmon cakes together.
Update 5/2014: Now I use my homemade bread crumbs exclusively but still use Ian’s Gluten Free Panko.
When I thought about all of the heels of bread I was wasting, I decided to learn how to make my own homemade gluten free bread crumbs.
When I finish a loaf, I just place the heels of the loaf in a plastic bag in the freezer. When I have enough heels, I break them into pieces and put in the food processor to grind. Pop them on a sheet tray and into the oven until golden brown.
Ta da! You have yummy gluten free bread crumbs you can use and you’ve saved money.
Homemade Gluten Free Bread Crumbs
Stale bread slices, loaf ends, or bread crusts (all gluten free, of course)
Preheat oven on to 350°F.
Place the bread slices, ends and crusts (I leave my crust on, but that is a personal preference) in food processor and pulse for about 10 to 15 seconds or until desired consistency. Processing times also depends on how many slices of bread you are processing.
Remove the pan from the oven and let cool.
Store in a freezer bag or mason jar in the refrigerator until use. They also freeze beautifully.
