It’s 80 degrees outside. Now don’t get me wrong, I love our new Florida home but I’m just not used to having it be so warm 2 weeks before Christmas and not be in Costa Rica. So what is a girl to do when she wants to get into the Holiday Spirit? Make hot chocolate and not just any hot chocolate. This is Eggnog Hot Chocolate.
Eggnog Hot Chocolate
Yields: 2 servings
1 cup eggnog
1 cup nut milk (I used walnut milk)
1 1/2 ounces bittersweet chocolate, chopped fine
1 Tablespoon cocoa powder
1 teaspoon sugar, or more to tast
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon Espresso powder
Pinch of Sea salt
Heat the eggnog and milk on medium-low heat to simmer.
Whisk in the rest of the ingredients. Continue to whisk frequently for about 5-8 minutes, until the ingredients are fully incorporated.
Let it cool slightly before serving.
