Tomato Feta Salad
Yields: 2-4 servings
2-3 Roma tomatoes
1/2 medium red onion, small diced
1/4 cup white wine vinegar
1/4 cup extra virgin olive oil
1/4 cup chopped fresh basil leaves
4oz. feta cheese
kosher salt, to taste
freshly ground black pepper, to taste
Cut tomatoes into bite sized pieces and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, and basil and toss well. Dice the feta in 1/2-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.
