Yesterday, I saw this recipe for MMM: Bacon Jalapeno Burger Balls from Melissa’s over at The Clothes Make The Girl … I was going to make hamburgers for dinner tonight away so I thought, why not give it a try!
I made them with slight modifications — Turkey Bacon instead of Bacon and added garlic and grass fed cheddar cheese. Delish!
Turkey Bacon-Jalapeño Mini Burgers with Dill Relish & Awesome Sauce
Yields: 15 mini burgers
Lightly adapted from this recipe
1 pound grass fed ground beef
4 strips nitrate-free turkey bacon
1 tablespoon grated onion (about 1/4 medium onion)
1/2 fresh jalapeno, seeds and ribs removed, minced
2 cloves garlic, minced
2/3 cup grass fed cheddar cheese, shredded
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
2 tablespoons warm water
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
1/4 cup pickles, minced (I used Bread and Butter Pickles)
1/4 cup tomato finely diced
1/4 cup red onion, minced
1/3 cup Greek yogurt (I used Fage)
2 Tablespoons Spicy Ketchup (or Chipotle Ketchup)
2 cloves garlic, minced (about 1 teaspoon)
1 teaspoon apple cider vinegar
1/2 teaspoon paprika
1/4 teaspoon ground cumin
dash cayenne pepper
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper
Preheat oven to 425°F Place parchment paper on large, rimmed baking sheet.
Place turkey bacon in a large skillet over medium-high heat. Cook bacon until crisp, about 3-4 minutes. Remove from pan and set aside to cool.
Add the onion and jalapeño to the pan and sauté until the jalapeño is soft, 2-3 minutes. Add garlic and cook for an additional minute. Set the pan aside until the veggies are cool to the touch.
When bacon is cool enough to handle, cut into small pieces.
In a large bowl, place the ground beef, salt, pepper, paprika, bacon, cheddar cheese, and the vegetables from the skillet. In a small bowl or measuring cup, mix the water with cream of tartar and baking soda. Pour into the bowl with the meat and mix until all the ingredients are evenly distributed. Make the relish. Mix all the minced ingredients together in a small bowl and set aside.
Make the Awesome Sauce. Mix all the ingredients together in another small bowl and refrigerate until it’s time to eat.
Remove the meat mixture from the refrigerator. Use a medium ice cream scoop, scoop mixture into moistened hands. Roll into a ball between your palms, then gently flatten. Line up the meatballs on the prepared baking sheet, about 1/2 inch apart.
Slide the mini burgers into the oven and bake for 15-20 minutes, until browned and cooked through.
Serve immediately, topped with a little relish and a drizzle of Awesome Sauce and Sweet Potato Fries.
