For the Doughnuts:
2 cups gluten free all purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla extract
3/4 cup nut milk (I used cashew milk)
2 Tablespoons organic unsalted butter, melted
3/4 cup organic fresh or frozen cherries, chopped
In mixing bowl, add gluten free flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Mix until combined. Add in eggs, vanilla, milk and melted butter. Mix thoroughly. Fold in chopped cherries.
Spoon batter into donut pan about 1/2 to 3/4 full. Bake in a 325 degree oven for 10-13 minutes. Remove and allow to cool in pans 5 minutes before removing to a cooling rack.
