Christmas is over! At least for another year.
I wasn’t going to write anything but then I realized it’s almost the New Year and it seems like maybe I should recap Christmas 2015 before the calendar turns to 2016 because then it will officially fall in the category of who really cares.
The week before Christmas, Gary and I went to Destin. While we had a great time, please remind me not to travel the week before Christmas. There was so much to do when we got back, I was feeling a little stressed. Please remind me not to schedule a vacation the week before Christmas. No I take that back. Don’t schedule a vacation in December.
Our Christmas Eve … On the menu was Christmas Truffle Pasta. This is a recipe that is in my A Gluten Free Christmas cookbook. But this year instead of making it vegetarian, I added with Bacon and Shrimp. YUM! YUM! I made two sides – Green Beans Gremolata, Salad with Pears and Walnuts. And for dessert, I made these Salted Caramel Parfaits.
Christmas morning means something cinnamon, usually cinnamon skillet bread (for me) and some sort of eggs (for Gary).
Our Christmas Day … on the menu was turkey breast, sweet and spicy carrots (I used purple carrots instead of the usual orange), Bourbon Chestnut Bread Pudding, Cranberry sauce, mashed potatoes and for dessert Eggnog Bourbon Maple Walnut pie.
We have lots of leftovers between Christmas Eve and Day … I may not have to cook for a whole week.
All in all, it was a great Christmas around here. Lots of fun and laughter and making great memories and eating too many pieces of pie.
I had a burst of energy and even took down the Christmas tree and all the other decorations and packed up two bags of stuff to drop off at Goodwill because there is nothing like the after Christmas clean up that makes you want to get rid of some clutter.
