I don’t usually write two blog posts in one day (although I can’t promise that I won’t ever do it again, but these posts are short), but I wanted you to have all of the components for the Strawberry Buttermilk Pancake recipe I’m going to share tomorrow. And I’m sure you are going to want to make this Blender Lemon Curd Whipped Cream…oh yes, you read that right whipped cream made in your blender.
I knew I wanted to make whipped cream to top the pancakes, but I didn’t want to pull out my stand mixer. Also, I didn’t have a chilled bowl in the refrigerator in order to use my hand mixer. I could have put one in the freezer for about 15 minutes, but that seemed like a lot of work, especially since I discovered a couple of months ago that you could make whipped cream in a high speed blender.
This method is so fast, you’ll probably never want to go back to making it with a hand- or stand mixer. It literally takes less than 30 seconds counting the time to pour the ingredients in the blender jar. Once I turn the blender on, it usually only takes 10-12 seconds in my Vita-Mix. The blender starts to sound different and that’s when I know it is done.
Be careful not to over mix it or you will get butter which I guess would be alright, but not when you are expecting whipped cream.
I made this on Saturday afternoon and was pleased to see that it didn’t separate by Sunday morning. The lemon curd must help stabilize with just like when I make Crème Fraîche whipped cream.
This Blender Lemon Curd Whipped Cream was delicious on the Strawberry Buttermilk Pancakes, but you could also use it to dip strawberries (or other fruits). For dessert tonight, I mixed a teaspoon of the strawberry coulis with the lemon curd whipped cream to dip our strawberries in.
Blender Lemon Curd Whipped Cream
1 cup very cold heavy cream
2 Tablespoons Confectioners sugar
Finely grated zest of 1 lemon
1/4 cup homemade or store-bought lemon curd (I used Trader Joe’s brand)
Combine the heavy cream, lemon zest and confectioner’s sugar in high speed blender.
Blend on high for about 10-12 seconds until soft peaks form.
Scoop whipped cream into bowl. Add the lemon curd. Stir until desired consistency.
Chill until ready to serve.
