When you think of March, some might conjure images of spring cleaning … or St. Patrick’s Day and Easter celebrations. For others, it’s all about March Madness! The upcoming weeks are exciting times for basketball fans. And for me, it is another reason to entertain.
Of all the sports, basketball is probably my favorite. When I worked in the corporate world, the company I worked for had season tickets to the Washington Wizards back when they were called the Washington Bullets (am I dating myself) and the Washington Capitals. Because I was in management I had first dips on the tickets when the two owners couldn’t use the tickets. I took advantage of this. I used to love hockey too … especially when they got into fights on the ice … until I went to massage school and realized what those players were doing to their bodies with all that rough play (I sound like my mother).
Anyway, the first round begins March 15 through April 4 with the 2016 NCAA Basketball Championship Game, so I thought I would start sharing some appetizer ideas.
First up are these Buffalo Cauliflower Bites. Now, I realize that the whole Buffalo Cauliflower thing might be a bit overdone at this point but I’ve been wanting to make them for a while. Because I love cauliflower and buffalo chicken.
Let me tell you a bit about cauliflower. It boasts anti-inflammatory properties, a variety of vitamins, helps to increase blood flow as well as being chock full of anti-oxidants! That’s a lot of punch in those white little florets.
Buffalo Cauliflower Bites
1 medium-sized head of cauliflower, washed and cut into bite-sized florets
1/4 cup of water
1/2 cup of milk
1/2 cup of gluten free flour
2 teaspoons garlic powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon salt
a few grinds of fresh cracked pepper
2 Tablespoons butter, melted
2 Tablespoon Tabasco sauce (or 1/4 cup, if you like things really spicy)
1/2 cup Bar-B-Que Sauce
Preheat the oven to 450°F and line your baking sheet with a silicone baking mat or parchment paper.
Into a bowl, whisk the water, milk, flour, garlic, paprika, cumin, salt, and pepper together.
Add a handful of cauliflower to the bowl and toss gently to coat, then lay them out on the baking sheet. Repeat until all of the cauliflower florets are coated.
Spread evenly onto cookie sheet and place in the oven. Bake for 15 minutes, flipping once. Remove from the oven.
In a separate bowl stir together melted butter, Tabasco and Bar-B-Que. Add baked cauliflower and toss to coat.
Spread evenly onto cookie sheet. Place back in the oven and bake for 25-30 minutes or until crispy, flipping once about half way through.
Remove from oven and let sit 10 minutes before serving.
I served it with celery sticks and homemade ranch dressing … but you could also serve it with guiltless blue cheese dressing.
Serve with ranch dip, guiltless blue cheese dip or your favorite dipping sauce.
