Happy Easter! I hope you had a lovely day celebrating with family, friends and food!
It’s just the two of us today, but I’m still making a big feast. On the menu today is Herbed Lamb Chops with Mint Chimichurri, Green Beans Gremolata, Beet Puree and Roasted Potatoes with Feta and Chives.
Oh and those Cloud Buns that are all the rave on the internet. I modified the recipe slightly to make them more savory adding herbs and parmesan cheese. And this time I baked them in my Popover Pan. Light and airy … and naturally gluten and grain free.
For dessert, a Triple Coconut Cream Pie (I’ll be sharing the recipe for this pie on the blog this week, so stay tuned).
