I’m on my own today for lunch so I’m continuing with the Grilled Cheese theme (it is national Grilled Cheese month after all).
On my weekend shopping exploits, I bought, tomatoes and an herb planter — you know the kind with a couple of herbs in one container — this weekend at the Farmer’s Market. The basil looks so good – one of the 4 hers along with oregano, parsley and thyme – I knew I wanted to make something with it.
Immediately I thought of caprese – tomatoes, mozzarella and basil! And then I thought grilled cheese! What a combination! So good!
I know I told you in my post on how to make the perfect grilled cheese that I use a combination of butter and mayo. But I had just bought some ghee (clarified butter) for another recipe – Mushroom Bourguignon – which I’ll be sharing soon.
And I wanted to see how the grilled cheese turned out. It was absolutely perfect. Just look!
Caprese Grilled Cheese
Yield: 1 serving
2 slices gluten free bread (or your choice of bread)
3 oz fresh mozzarella, sliced (I used one package of BelGioioso individual snack packages)
1 slice baby swiss cheese
1 Capri tomato, sliced
4-5 fresh basil leaves
2-3 teaspoons Ghee (or butter/mayo mix)

Turn Griddler on to panini or heat non-stick pan over medium heat.
Spread ghee on one side of each slice of bread. Place one slice on Griddler. Place the baby swiss slice and mozzarella slices on one slice of bread, top with the basil and tomato slices and finally top the other slice of bread.
Close Griddler and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
