I went to the grocery store this morning. It wasn’t my regular day but I needed to get a few items to make a Peanut Butter Cheesecake. It’s one of Gary’s favorites. I think he is addicted. He wants it all of the time.
But I digress … I’m so glad that I went to the store because cherries have made their reappearance! Whee! I love cherries! They are sweet and tart.
They are perfect to make this Cherry Mango Salsa. This salsa is so good. I’ve been dreaming of it for the past couple of weeks in anticipation of cherries. And now I can share this recipe for Cherry Mango Salsa with you. I first made this salsa last September when cherries were at the end of their season.

Cherry Mango Salsa
Yields approximately 2 cups
1 cup pitted and peeled mango, cut into small chunks
1 cup pitted bing cherries, halved
1/4 cup red onion, minced
2 cloves garlic, minced
1 teaspoon green chili powder (or you could substitute jalapeño)
Juice of 1 lime
handful fresh cilantro, chopped
Salt and pepper
Stir the mango, cherries, onion, and garlic in a medium sized bowl. Add the lime juice and stir to coat. Stir in the cilantro and green chili powder. Season with salt and pepper
