Creamy guacamole stuffed between two crunchy golden slices of gluten free bread and cheddar and colby jack cheeses. It literally bursts with flavor and out of the bread as you bite into it. A little messy but, oh so, yummy! Who knew you could make a classic grilled cheese sandwich any better?

But since this month is National Grilled Cheese Month … no really, it is actually on the books, I’m going through all of my grilled cheese pictures as well as making a few more (like this Caprese Grilled Cheese I had for lunch the other day).
And I made this “bad boy” last week and I think I finally got it captured to its full glory…so without further ado, here is the recipe for Guacamole Grilled Cheese.
Guacamole Grilled Cheese
Yields 2 sandwiches
1/2 cup guacamole (like this classic recipe or crabby guacamole)
4 slices of gluten free bread (or bread of your choice)
1 Tablespoon butter, room temperature
1 Tablespoon mayonnaise (I used Just Mayo)
4 slices your choice of cheese (I used cheddar and colby jack)
Turn Griddler knob to high. While it is heating up. Mix butter and mayo in a small bowl. Smear one side of each bread slice with butter-mayo mixture. Place bread slices buttered side up on plate.
Place 1 slice of bread on the Grillder. Top with half the cheese, then about 1/4 cup (or less or hey even more) then the remaining cheese. Place other slice of bread on top. Repeat for second sandwich.
Close Griddler lid. Cook 3-5 minutes, or until golden brown. Check them to see if they are done to your liking. You may need another 1-2 minutes on second side.
Just in half. And if you really want to make your friends jealous, take a photo and put it on Facbook or Instagram before digging in. Enjoy!
