Happy Easter! Can you believe it is Easter already? It just seems like it what Christmas and Easter is even late this year.
I love holidays. It’s a time to be with family and friends and make a special meal.
Easter is a religious holiday – a time to celebrate that Jesus Christ arose from the dead. But did you even wonder where the bunnies and colored egg traditions came from? You can read all about it here.
This year I made lamb with mint chimichurri (actually I think I’ve made this for the past few years). Gary planted an herb garden in a planter box in our lanai so we are reaping the harvest of mint, parsley (two of the herbs that go in this chimichurri), thyme, cilantro and basil.
I paired it with roasted new potatoes with feta. This is an old stand-by and I absolutely love this recipe. The potatoes are so creamy and it matches nicely with the salt from the feta.
And because I didn’t want to make the same thing all of the time, I made carrots … but a new way — this time with an orange glaze.
Easter is a time many of us choose to indulge in chocolate…and boy did we with these gluten free mini Cadbury Creme Egg Chocolate Lava Cakes. I’ll be back tomorrow to share this recipe with you.
I don’t eat/drink caffeine after 2 p.m. (or I won’t be able to sleep) so I decided to have my Cadbury Creme Egg Lava cake after lunch since it has espresso powder and lots of chocolate. It was really good, but my head was buzzing for several hours — so I’m really glad I didn’t eat it after dinner.
